Do color schemes matter?

I know there are several theories behind this when it comes to marketing and branding but does it truly make that big of a difference? 

I think choosing colors that go good together makes sense but outside of that, is there any real benefits to using specific colors for specific niches? An example of this would be for offline companies like fast food chains. Many of them use red or yellow, sometimes a mix of the two.

I think they do, yes. 

Each color has ties to emotions and how people preconceive something. There are loads of studies on this and it is why there has been such a huge focus on matching the right colors to brands and businesses in the last 50 years.

I am on the fence with this. I see people tend to default to blue or green online no matter what their site, business, or service is. I think both colors do well online, better than others so as long as you use blue or green either as a primary or secondary color, you shouldn't have to worry too much.

I did notice that as well. It seems like most online businesses use blue. I read somewhere that the color signals some level of trust and assurance when it comes to consumers so people are more likely to feel safe and that they are doing business with a trusted company.
